I was contacted by General Mills through My Blog Spark to giveaway a $25 Publix gift card. I was supposed to tell you how to make busy weeknight meals easier and faster using coupons at Publix. Except that I got so busy that I forgot! Here it is the last night of the promotion (really the last 30 minutes) and I haven't posted yet.
In all fairness, I am working up a post about how to pay for homeschool and autism therapies by budgeting, couponing , etc. It's still a work in progress though. I don't want my faithful readers to miss out on a chance to win a grocery gift card either. Hence this random post about nothing. Plus, General Mills was nice enough to provide me with one as well.

ReplyDeleteMy best meal time preparation tip is to use my coupons to purchase skillet meals in a bag for those really busy nights. Am I kidding? Nope! Bertoli and other similar companies have come out with some awesome skillet meals that have the meal ready and on the table in under 30 minutes. Sometimes you may have to add rice, but most of the time the entire meal is contained in the one bag.
The second meal preparation tip is how to cook rice in the microwave. This is a fail proof method. The rice is never sticky and is always just right and ready in 20 minutes!
Directions:
1 c. uncooked rice
2 2/3 c. water
Put both in a microwave safe bowl. Stir with a fork to evenly distribute the rice in the bowl. Do NOT cover with a lid. Set the microwave on high for 20 minutes. When the timer dings, the rice is ready and perfect!

My favorite GF/CF tip is to use coconut milk as a substitute in baking. If you get the milk that separates in the can, you can use the thick layer for butter or lard. You can use the thin liquid for milk.
